Roasted Vegetables and Polenta

I've been dying to try the polenta I picked up while grocery shopping to see if it was easier/better/less explosive than the last batch. Success! The trick is to buy the prepared polenta in the tube if the recipe calls for slicing it and NOT the dry shrink-wrapped version. This is key, unless ending up with a pile of corny grits on the floor, stove, counter, and self is the goal. Probably not. I wasn't feeling particularly creative or motivated to try to improve the soup this evening so I dug into some of the leftover roasted vegetables with mozzarella...


...brushed a couple 1/2" slices of polenta with a tiny bit of olive oil and popped them under the broiler for 5 or 6 minutes (don't they look devilish cooking?)...


...and topped it all with freshly-grated parmesan cheese! YUM!


I was still craving something sweet afterwards! What is with the sweet tooth today? I debated having a tiny scoop of some vanilla bean ice cream but ended up savoring a teeny handful of chocolate chips instead and they totally curbed the ice cream binge that likely would have occurred. Off to bed early tonight and hopefully early to rise tomorrow!
