I had a lot on my figurative plate to accomplish this afternoon and was dying to make some more of those tasty sweet potato fries so I kept lunch simple and made almost exactly the same meal I had last night - BBQ tofu, sweet potato fries, sauteed chard, and this time added a slice of whole grain bread with a bit of jam. Dinner last night left me just a little bit hungry so I made even more chard (about 2 cups raw) and added the bread to fill me up a bit more while I was out running around.
Guess what? I STILL got hungry quickly. I'm going to have to play around with this one a bit more....
